Creamy Hot Chocolate with Hazelnut

A lot has happened since New Year’s Eve. We had a very successful to Real Life Gourmet Dinner in Bern. Thanks again to all who came! In addition, I have just finished a training as a baby massage instructor, we are about to move to a new city, and preparations for the big brunch next Sunday are also happening right now. But somehow we are still at the beginning of the year. There is so much more to come. Isn’t this awesome? I have a very good feeling for this year. I believe that several wonderful things will happen..

My biggest learning of the last year, however, is that everything is going to be fine anyway, if I have a positive attitude and take things calmly. Prospi has already told you about my final thesis for the university, which I wrote following the 80/20 principle. Our wedding in September was another great example of this learning. I deliberately put myself in a positive vibe and decided to enjoy the special day without sticking to the idea that everything will be perfect. Even if the marquee would collapse and heavy rain would start at the same time, I could accept this situation and continue to celebrate. In the end, nothing collapsed, and the weather was fantastic. But this attitude has allowed me to take everything as it came, and to enjoy an absolutely magical and unforgettable wedding day full of love and positive energy. Of course, not everything came as planned. It was imperfectly perfect. And that’s how life is.

I usually make this kind of hot beverages with our blender. But as I know that not all of you have a powerful blender at home, I’ve created a version that can be made with a normal hand blender.

Noodles with Japanese Sesame Sauce and Ginger Veggies

In my last article I have told you how I follow a plant-based diet while travelling. The idea for this article came spontaneously during my three-week trip in Japan. There, it was in fact not always easy to get plant-based dishes. However, I discovered and tried a lot – which was absolutely worth it. I really like the Japanese cuisine. Often, the foods such as rice, noodles, vegetables, tofu, mushrooms, etc. were not very flavorful. Crucial for the taste was the sauce. And whenever I found sesame sauce on my dish, I was very happy because it was generally really really delicious. At the same time sweet, slightly acidic, with intense sesame flavor and the Japanese touch due to the soy sauce. Once I was back in Switzerland, I tried to make it myself. My first attempt contained about 10 ingredients. Only at the second attempt, I realized that it actually requires only 5 ingredients. Like this, I absolutely loved my homemade sesame sauce. And it’s also like this that I want to share it with you now!

Russian Salad with Plant-Based Mayonnaise Sauce

We are often asked for plant-based barbecue ideas. There is actually a lot you can make. A simple classic are zucchini and eggplant slices with a little oil and salt. We also like to grill cobs, stuffed mushrooms (for example with our cashew sour cream) or avocado halves. Marinated vegetable kebabs, sometimes with mushrooms or tofu, are also very tasty.

For the side dishes, there are no limits. One of the side dishes that we especially love for barbecues is Russian Salad. Normally, Russian Salad is made with lots of mayonnaise containing eggs. However, in our recipe we suggest a very authentic and tasty plant-based mayonnaise sauce. It is super quick and easy to prepare. Of course, it is extremely versatile. If you mix it with potatoes, peas and carrots, you get a delicious, satisfying, nutritious and high-protein Russian Salad. Its mild taste fits perfectly with the rich roast flavors from the grill.

Cookbook Review “Gesund Kochen ist Liebe” & Millet Pilaf

«Gesund Kochen ist Liebe» is german and means «Cooking Healthy is Love». Isn’t this a beautiful title that Veronika Pachala has chosen for her cookbook? Cooking a healthy meal is really a wonderful way to express ones love. The author does this everyday for her little daugher and her husband. With her blog «Carrots for Claire» and the new cookbook, she aims to inspire other people to do the same. In my opinion, this sentence can also be reversed: “Cooking with love is healthy”. The more love we put into the preparation of a meal, the healthier and tastier it is for the person who eats it. In a book about ayurvedic nutrition I recently bought, a whole chapter is dedicated to this principle. This is why I recommend you to treat the ingredients as lovingly as you can and to have positive thoughts when preparing the delicious millet pilaf I’m going to present you. The recipe for the millet pilaf is so great that I already made it several times as a side dish. It is from Veronika Pachala’s cookbook «Gesund kochen ist Liebe». What else there is to discover in this book, I’ll tell you in this article.

Cookbook Review: “The Plantpower Way” & Cashew Milk

I was really surprised how easy it can be to make plant-based milk, when I tried out the recipe of “The Plantpower Way”. There are many recipes of homemade nut milk. But I really like the fact, that it is possible to make it within 5 minutes for immediate consumption. We like to drink this white drink with its mild taste just as it is or sweetened with a little honey. But you can also refine it with spices, mix it with granola or use it in other recipes. This particular cashew milk is not the only thing I like about “The Plantpower Way”. This book contains many elements that make it not only a cooking inspiration, but also a life inspiration. The content is so positive, that I close the book full of hope and with a smile in my face, whenever I’ve read some pages.
