Caramel Cream with Vanilla Apples (no refined sugar)

Are you looking for a super quick and yet impressive dessert for a spontaneous summer barbecue evening with friends? Then we have the solution for you. This caramel cream consists of only three ingredients and is actually very easy to prepare. Instead of refined sugar, caramelized dates provide a wonderful flavor. The cream tastes particularly delicious in combination with the vanilla apples. It’s a light sweet pleasure for hot days. This dessert contains healthy fats and other precious nutrients. It is also an excellent snack or breakfast. When there are leftovers, I add them into my oatmeal.

I recommend you to soak the cashews in advance. As a result, they are easier to digest and their nutrients can be better absorbed by our bodies. You can soak them overnight or for at least one hour.

Cut the apples into bite-sized pieces and preheat the oven to 180C/356F.

Blend the dates together with 200 ml water, a pinch of salt and the vanilla.

Place the apples into a gratin dish.

Add the date and vanilla sauce and mix it with the apples.

Bake the vanilla apples for approximately 20 minutes.

In the meantime, start making the caramel cream by chopping the dates.

Heat the coconut oil in a pot over medium heat. Add the chopped dates and stir well until they get caramelized. Then, add two pinches of salt. Cover the caramelized dates with 300 ml water.

Pour everything into a blender. Add the cashews without their soaking water.

Blend it all together until it gets a creamy consistency. It’s also possible to make the cream with n immersion blender. It might get a little less homogeneous.

CARAMEL CREAM

Preparation time:

Ingredients:

  • 100 g/3.5 oz dates (pitted)
  • 1 tbsp coconut oil
  • 100 g/3.5 oz cashews

Directions:

Soak the cashews in water for at least one hour (best would be 8 hours). Then, throw away the soaking water. Chop the dates and heat the coconut oil in a small pot on medium heat. Add the dates as well as two pinches of salt to the coconut oil and stir well until they get caramelized. Cover it with 300 ml water and put it into a blender. Add the cashews and blend it all together.

VANILLA APPLES

Preparation time:

Ingredients:

  • 4 large sweet apples
  • 70 g/2.5 oz dates (pitted)
  • ½ tsp vanilla

Directions:

Preheat the oven to 180C/356F. Cut the apples into bite-sized pieces. Then, blend the dates together with 200 ml water, a pinch of salt and the vanilla. Mix the apples with the date and vanilla sauce in a gratin dish. Bake them for approximately 20 minutes.

In my opinion, the tastes of apples and caramel fit perfectly together. However, if you’re not a big fan of apples, you can also bake other fruits. Peaches with vanilla coming from the oven taste awesome. An other option would be to serve the caramel cream with fruit compote. Recently I bought Swiss strawberries on the farmer’s market and cooked them together with some coconut sugar, water, and vanilla. They tasted heavenly together with the caramel cream.
