Chunky oven potato chips

Who doesn’t like a snack? Chips are one of my guilty pleasures, in particular the chunky chips. However, it doesn’t need to be a guilty pleasure: there’s no deep-frying in this chunky oven potato chips’ recipe. This flavourful chunky chips recipe is super easy and fast to prepare and it goes very well with the Cheesy cashew sour sauce dip. It is a wholefood, plant-based healthy version

In general, I don’t appreciate deep-fried food, but chips are an exception. However, you can cook chips without frying them: pop them in the oven instead, season them with some herbs and then serve them with a sauce you like. I served it with the Cheesy Cashew Sour Sauce but you can serve it with any sauce or dip that you prefer. This version is healthier and still delicious and with all the nutritional benefits of potatoes and sweet potatoes.

The normal potato is a great source of vitamins C, potassium, fat-free, and a great source of complex sugars, which are the ideal type of carbohydrates for our bodies. Despite its name, sweet-potato isn’t a potato, but another starchy tuberous root veggie, high in vitamins A and C, high in fibre and potassium but lower IG than the potatoes.

This snack will keep you satisfied for long, it will provide you with the right sugars, with fibre and a lot of other nutrients that benefit your health. But above all, it is a delicious snack, fast and super easy to prepare.

The recipe

Chunky oven potato chips

Gather all the ingredients you need.

Cut the potatoes into strips. Add a dash of olive oil, sprinkle them with herbs (I chose the Provence mix), salt and mix all with your hands. Pop them in the oven 180C for 30-40 minutes. If they are getting too crispy outside cover them with foil.

Preparation time: 


  • 1 medium-size potato
  • 1/2 of a big sweet-potato
  • Provence mix herbs & black pepper
  • salt
  • olive oil


  1. Without peeling their skin, cut the potatoes into strips
  2. Place them evenly on a tray
  3. Add a dash of olive oil, sprinkle with the herbs & pepper and salt and mix all with your hands
  4. Place them in the oven for 180C for 3-40 minutes
  5. Serve them with the Cheesy cashew sour sauce
