As current news, we are happy to announce that we will give workshops in German-speaking Switzerland. Many of you told us that they would like us to organize sustainability workshops with joint cooking. So here they are! The next four workshops will be held on the following dates :

Together, we will cook a totally delicious plant-based, wholesome and organic dish. Of course with dessert. 😉 Furthermore, there will be a part with tips and inspirations for a more sustainable life. More information here.

As we are working a lot lately, we need dinners that are easy and simple to prepare. Still, it is part of our philosophy that food needs to be tasty and healthy. Therefore, wholegrain pasta and a delicious sauce is perfect. We already ate this basil carrot lentil sauce several times, because we really like it. With some good oil, onion, herbs and high quality sea salt, the carrots that are full of vitamins and the lentils that are full of proteins and minerals develop their full flavour. They provide a harmonious combination.
First, you need to cook the red lentils in a pot with some water and a pinch of salt. This takes approximately 15 minutes.
While the lentils are cooking, you can wash the carrots and cut them into slices. The onion needs to be chopped.
Now, you need some fresh basil. Add it together with the capers into the pot with the cooked lentils.
Add some Italian spice mix and pepper before you blend it all together.
Take a big pot and fry the onions with the oil.
As soon as the onion looks translucent, add the carrots and some salt. The carrots also need to be fried for some minutes. Then, cover them with some water and a lid. Wait until the carrots are cooked before you set aside half of them.
Mix the carrots that are still in the pot with the lentil mash. Blend this well.
This is how the basil carrot lentil sauce looks like when it’s ready.
Serve the sauce together with wholegrain pasta or your favourite kind of pasta and the carrots that you have set aside. By the way, these plates are from Ikea, where you can find tipps on sustainable living.
BASIL CARROT LENTIL SAUCE
plant-based (vegan), lactose-free, soy-free, gluten-free
Level of difficulty: easy
- 800 g/28.2 oz carrots
- 1 onion
- 1 tbsp capers
- 150 g/5.3 oz red lentils
- 2 tbsp olive oil
- some fresh basil
- Italian spice mix, pepper
First, you need to cook the red lentils in a pot with some water and a pinch of salt for approximately 15 minutes. Meanwhile, chop the onion and cut the carrots into slices. Then, blend the lentils together with the capers, the basil, some Italian spice mix and pepper. In a separate pot, fry the onion using the oil. Then, add the carrots and some salt. Fry the carrots for some minutes. Cover them with a little water and a lid. As soon as they are cooked, set aside half of them. Blend the other half with some water and the lentil mash. Serve the sauce with pasta and the carrots that you have set aside.
