I scream, you scream, we all scream for Ice-cream!!
My life is often very busy and not always I have a lot of time to spend in the kitchen preparing fancy dishes. Nevertheless, and as you might have seen by now, you can easily create delicious and yet very simple recipes with very little effort or time. Today’s recipe fits perfectly in that category, having an extra bonus of helping you reducing food waste in your house. A delicious, wholefood, plant-based and super easy to do Ice-cream.
Sometimes all you want in hot summer days is a refreshing ice-cream. However, it can be challenging to find vegan options and even more challenging finding healthy ones. Although nowadays you can find more and more vegan ice-creams (at least in Cambridge), they are still very processed and rarely healthy. They are normally quite expensive and hardly eco-friendly as they tend to come wrapped in a lot of plastic packages.
My urge for a healthier, easier, cheaper and more sustainable option led me to find this super easy recipe that requires very little effort. Instead of throwing away your ripe bananas, slice them and pop them in a freezer. You can do the same with your berries. I normally have some of these fruits stored there which often come in handy: you can use them for ice-cream, porridge, etc.
By using your ripe bananas, instead of throwing them away, you’ll be reducing food waste in your house. And as you won’t be buying an ice-cream in a shop, you’ll not only be saving money but also you’ll be avoiding all the packaging that comes along with it.
Furthermore, you’ll also be contributing for your health as you’ll have all the benefits and nutrients from fruit, you won’t have any added sugar, preservatives, nor further ‘funny’ ingredients that processed ice-creams may have. But all the deliciousness will be there! 🙂
So how do I do the Ice Cream?
Make sure you have your sliced frozen fruit: slicing them before freezing allow you to blend all easily.
Put the frozen fruit in a blender and brrrrrrrr. Blend it all. You’ll soon see that it becomes creamy and delicious. If you want to add any sweetness, cacao powder or cinnamon, now is the moment!
Mine had only fruit and it was delicious!
Top it with walnuts or any other topping of your taste.

Banana & Strawberry Ice-cream
Gluten-free, lactose-free, soy-free, plant-based (vegan)
1 banana + 2 strawberries per serving
Level of difficulty: very easy
Preparation time: 5-10 minutes
- Slice a ripe banana and strawberries and pop them in the freezer;
- Once frozen, put the fruit in the food processor and blend all;
- If you want to add cacao powder, cinnamon or sweetener, do it whilst blending;
- Use any topping you would like. In this recipe I used walnuts but you can choose any other of your taste;
- Serve it and enjoy!
